Gluten-Free Spinach and Ham Quiche

 
Gluten-Free Spinach & Ham Quiche

Ingredients:
  • Frozen gluten-free pie crust
  • 2 cups bagged spinach leaves
  • 1 cup cubbed cooked ham
  • ½ cup shredded cheddar cheese
  • ½ cup shredded swiss cheese
  • ¾ cup almond milk
  • 2 eggs
  • pinch of ground black pepper
  • pinch of Himalayan pink salt
  • ½ teaspoon olive oil

Directions:
  1. Prepare gluten-free pie crust as directed.
  2. (The one I use is set out at room temperature for 10 minutes, the bottom and edges are pricked with a fork, foil is placed over the edges, and then baked on 375° for 10 minutes before using.)
  3. Sauté spinach in the olive oil on medium heat for about 2 minutes, or until spinach wilts.
  4. Whisk together the milk, eggs, salt, and pepper.
  5. Layer spinach, ham, and cheeses in crust.
  6. Pour egg mixture over cheese.
  7. Bake at 375° for 35 minutes, or until top is golden. Let cool for 5 minutes before serving.

  • This recipe can be made in advance and stored in the refrigerator for 5 days.
  • I use So Delicious Unsweetened Almond Milk Plus Protein.
