Spinach & Ham Quiche
Ingredients:
- Frozen gluten-free pie crust
- 2 cups bagged spinach leaves
- 1 cup cubbed cooked ham
- ½ cup shredded cheddar cheese
- ½ cup shredded swiss cheese
- ¾ cup almond milk
- 2 eggs
- pinch of ground black pepper
- pinch of Himalayan pink salt
- ½ teaspoon olive oil
Directions:
- Prepare gluten-free pie crust as directed.
- (The one I use is set out at room temperature for 10 minutes, the bottom and edges are pricked with a fork, foil is placed over the edges, and then baked on 375° for 10 minutes before using.)
- Sauté spinach in the olive oil on medium heat for about 2 minutes, or until spinach wilts.
- Whisk together the milk, eggs, salt, and pepper.
- Layer spinach, ham, and cheeses in crust.
- Pour egg mixture over cheese.
- Bake at 375° for 35 minutes, or until top is golden. Let cool for 5 minutes before serving.
